Coupon valid until December 31, 2015. ✃✃ Apricot and brandy glazed ham Ingredients: 1 whole cooked leg ham, bone in or out Small handful whole cloves 1 cup apricot jam 1⁄4 cup brandy Method: Preheat oven to 150 degrees C. Warm ham in oven for 10-15 minutes until skin starts to loosen. This helps it to peel off easily. Remove from oven and increase temperature to 180 degrees C. Peel off ham skin by gently pushing your fingers between the skin and fat. Use a sharp knife to lightly score the fat in a diagonal criss-cross pattern. Insert a clove in the centre of each diamond. Mix apricot jam with brandy. Place ham in a large baking dish and spread over the glaze. Bake for 50-60 minutes, brushing with glaze from bottom of roasting pan every 10 or so minutes. It’s best served at room temperature. Recipe: www.annabel-langbein.com Retro prawn salad Ingredients: 25g butter 2 cloves garlic, chopped 32 prawns, tails on and defrosted 1 tsp lemon pepper 1 tsp celery salt 2 tsp good quality mayonnaise 2 tsp aioli 1⁄2 cup telegraph cucumber, chopped and with skin on 8 medium-sized lettuce leaves 1 avocado chopped 1 spring onion, finely chopped and for garnish Lemon wedges to serve Method: Melt butter over a medium heat, add garlic and sauté for a minute. Add prawns, lemon pepper and celery salt. Cook for 2 to 3 minutes, remove from heat and cool in a bowl on the bench. Add mayonnaise, aioli and cucumber to prawns. Chill for 10 to 15 minutes. Serve with lettuce and avocado. Garnish with spring onion and a lemon wedge.
