Ten-year-old Nicholas Brockelbank has put together Nic’s Cookbook, a 31-page recipe book flled with some of his favourite creations. The Cambridge, Waikato, resident and his book publisher Scholastic are donating 50 per cent of royalties from sales of the cookbook to the Muscular Dystrophy Association. From sweet treats to mouth-watering savouries, easy dinners to more fancy meals, it’s all there in Nic’s Cookbook, which is suitable for budding chefs of any age. Each recipe has step-by-step instruc- tions and colourful images to get the creative juices fowing. The ingredients used are easily sourced and there are handy hints and fun facts to entertain big and little food- ies. For example, did you know Laming- tons got their name because they looked like Lord Lamington’s hat? Among the recipes, the couscous ked- geree and Spanish omelette with caba- nossi sausage look particularly tasty, and the parmesan-topped tomato and mushroom risotto, summer rice paper rolls and apple and carrot salad will also tempt vegetarian palates. However, the crème de la crème of the collection – at least from a chocoholic’s perspective – is the recipe for chocolate cookies and cream ice cream cake. How could anyone resist? Nic’s Cookbook debuted at number three on the Booksellers NZ Children’s top 10 list and reached number two on the Indie top 50 list. Its school-aged author has taken part in numerous cooking demonstrations in bookstores with celebrity assistants Simon Gault and Brett McGregor. His sunny personality shines through the pages of the cookbook and will be food for thought for any pint-sized chef with big dreams.
