BEDPOST BOTANY AT THE HUB 124393 BEDPOST BOTANY STORE NAME Full address and store contact/opening hours J142337 Bedpost November A4_Press Ad.indd 1 21/10/13 4:43 PM M J142337 Bedpost November A4_Press Ad.indd 1 21/10/13 4:43 PM 124393 Plum DELICIOUS PLUM PUDDING Serves 3 INGREDIENTS Margarine to grease the basin 2 tablespoons plum jelly (jam) 2oz (60g) butter 1⁄4 cup sugar 1 egg 1⁄2 cup all-purpose (plain) flour 1 teaspoon gluten-free Baking powder 1 tablespoon milk METHOD Place a saucepan that will fit a 5 x 2in (13 x 6cm) deep fluted pudding basin on to boil, with enough water to come halfway up the pudding basin. Make sure that you have a tight- fitting lid for the saucepan. Grease the pudding basin with margarine, and cut a piece of greaseproof paper large enough to fit the top of the basin. The paper should be larger than the basin so that it will not let any water in when the pudding is steaming. Place the plum jelly in the bottom of the greased pudding basin. Cream the butter, sugar and egg together until fluffy. Fold in the sifted flour and baking powder. Stir in the milk and pour into the pudding basin. Lower the pudding into the boiling water. Loosely lay the greaseproof paper on top of the pudding. Place the lid on the saucepan and keep the water boiling for about 40 minutes. When cooked, turn the pudding out onto a plate and serve with custard or ice cream.
